An Easy Way to Try Tofu !

Alternate title: How to Get More Veggies Into Your Diet!

Or a Tasty Way to Try Tofu & Eat More Veggies!

Ok, enough of that title business, on to the directions. This is so simple, it's uncanny. Chop up the following vegetables & put them into a baking dish.

1 Bunch of Green Onions
1 Large Red Onion
1-2 Red Peppers
2 Cups of Green Beans
2 Cups of Carrot coins
2 Large Ripened Tomatoes
2 Cloves of Fresh Garlic

Then Dust the veggies with Garlic Powder, Onion Powder, Salt, Pepper, Basil & Parsely. Let sit in the baking dish.



Step one: Chop veggies.

You could stop now & add salad dressing and have a awesome salad.


Step two: put them into a baking dish.

Some Veggy options, that you could include or opt to use instead: Mushrooms, Potatoes, Broccoli, Spinnach, Peas, Corn, or Edame. Mmm I can imagine red bliss potatoes with this.. YUM! Altho I'd think I'd rather make the bliss into roasted potatoes & spices. MMM, I might do that next.. would be delicious together. :)


Next step: take the tofu block and put it into a bowl. Break it up with a knife, fork or smash it with your clean fingers. Then use a whisk and beat on it some more. Add in the same spices & amounts you used to dust the veggies with. Maybe taste the tofu and see if you need more spices. I just go by taste for amounts. You could do the same or measure them out, if you like. Then place the tofu & spices into the blender, or a smoothie machine. Add a splash and a half of oil of your choice. I love vegetable oil or canola. But olive is a good choice too. Next add in some milk, just a splash or so. Hit frappe on the blender and blend until the tofu is smooth. Smoothness of pudding. Now taste the tofu. Does it need more spicing? If so do it now & mix it up again. When you're done take the tofu mixture. This is essentially tofu ricotta or tofu cheese, as my son calls it. Pour the tofu over the top of the veggies in the baking dish. Place in a 350*F oven and cook for 20 minutes with tin-foil on the top. After that take the cover off and cook an additional 30 minutes. Check it at the 15 minute mark. But let it go till the tofu mixture is set. It will be similar to scrambled eggs or a egg quiche when done. Texture will be similar too.


Step three blend a block of tofu with spices & oil to create tofu cheese.
